Why not kick-start your day with this delicious tropical smoothie? It’s light and refreshing – the perfect start to a hot summer’s day. I love using fresh spinach in my smoothies because it’s very neutral in taste; you’ll barely even notice that it’s there. Incorporating more greens into your diet has never been so easy (and yummy)!

Ingredients

Scale
  • 50 g baby spinach
  • 200 g pineapple, cut into medium-sized chunks
  • 200 g mango, cut into medium-sized chunks
  • ½ inch fresh ginger root (approx. 10 g), peeled and roughly chopped
  • 4 sprigs fresh mint, leaves only, discard stems
  • 120 ml cold water
  • ice cubes, to serve

Instructions

  1. Add all the ingredients to the blender and blend until smooth. If it’s too thick for your liking, add some more water and blend until smooth. Serve with ice.

Substitutions and Alterations

  1. To make the smoothie sweeter: add honey, agave nectar or sweetener of choice.
  2. To make it less sweet: add a little water or ice.
  3. Other bases: you can substitute the water for coconut milk/water (for an extra tropical twist) or juice (for added sweetness).
