Perfectly roasted salmon marinated in, and topped with, a delicious, tangy coriander-based salsa verde. A quick and easy dish that takes just 20 minutes from start to finish.

- 4 salmon fillets
For the coriander salsa verde:
- 2 garlic cloves, roughly chopped
- 2 vine tomatoes, roughly chopped
- 1 large handful of fresh coriander, roughly chopped
- 1 tsp sherry vinegar
- 1 tsp white sugar
- olive oil
Instructions
- Heat your oven to 230℃. Line a baking tray with foil.
- Lightly season the salmon fillets with sea salt and freshly-ground black pepper.
- Add the garlic to a mortar and grind into a paste.
- Add the tomatoes and coriander and grind until they break down.
- Add the sherry vinegar, sugar and a drizzle of olive oil and stir well to combine. Season with sea salt and freshly ground black pepper, to taste.
- Add half of the salsa verde to the salmon and toss to coat.
- Arrange the salmon in a single layer on the foil-lined baking tray and roast for 8 to 12 minutes, depending on the thickness of your fillets, or until just opaque and easily flaked with a fork.
- Top the salmon with the remaining salsa verde and serve – enjoy!
