Spiced Grilled Chicken with Caramelised Onion Hummus

This recipe is inspired by Middle Eastern-style shawarma plates. It consists of homemade Caramelised Onion Hummus topped with grilled chicken thighs, marinated in garlic, warm spices and lemon. Serve with your favourite side salad for an easy, delicious midweek dinner that is both healthy and high in protein, or pop it all into a flatbread and make yourself a tasty wrap. Either way, it’s delicious!

Ingredients

For the marinade:
- 3 tbsps olive oil
- 2 tbsps harissa spice powder or ras el hanout
- 1 tbsp garlic powder
- 1 tsp salt
- ½ tsp freshly-ground black pepper
- 1 lemon, juice only
For the chicken:
- 1 kg chicken thigh fillets (boneless, skinless chicken thighs)
Instructions
- Add the marinade ingredients to a bowl and whisk to combine. Add the chicken and toss well to coat. Let sit 30 minutes, or better yet, cover and refrigerate for up to 4 hours. While the chicken is marinating, prepare the Caramelised Onion Hummus.
- Heat your oven grill to medium-high/high. Arrange the chicken in a single layer on a foil-lined baking tray. Roast for 20 to 25 minutes, or until the chicken is cooked through – chicken thigh fillets cook quickly.
- Transfer the chicken to a plate, tent with foil and let rest for 5 minutes. Once rested, slice the chicken. Top the hummus with the chicken and serve with your favourite side salad or pop it all into a flatbread and make yourself a tasty wrap.
